Kurzfassung englisch:
This paper investigates the fermentation processes in winemaking using a self-actuating/self-sensing piezoelectric MEMS-resonator, excited in an advanced roof tile-shaped vibration mode, showing the ability to distinguish between ordinary and stuck wine fermentations. When analyzing stuck fermentations, a significant change in the resonance characteristics of the sensor is observed, indicating undesired fermentation kinetics. These findings demonstrate the ability of the investigated piezoelectric MEMS resonator to monitor the fermentation kinetics and detect possible stuck or sluggish developments in an early stage of the wine making process.
